Date Nut Bars

Totally a kid inspired snack! Who doesn't love peanut butter and chocolate? As a health coach and personal chef, I'm always playing around with ways to make healthy versions of some of my favorite treats. Made with completely organic ingredients, these sweet treats are GF, Dairy Free and naturally sweetened with dates.

Servings: 16


INGREDIENTS:

  • 12 Pitted dates

  • 1/2 cup chopped walnuts

  • 1/2 cup almonds or pistachios

  • 1 cup organic peanut butter

  • 1/2 cup local honey

  • 10 oz. dairy free semi sweet chocolate chunks

  • 2 tablespoons coconut oil


INSTRUCTIONS:

  1. Line an 8x8 pan with parchment paper.

  2. Soak dates in hot water for about 10 minutes.

  3. Add nuts to a food processor and pulse to small pieces. Drain the dates and add to food processor with the nuts. Process on dough setting until the mixture comes together.

  4. Pour dates and nuts into prepared pan and press into an even layer to fill the bottom. Place in freezer for about 20 minutes.

  5. While the date mix is chilling, add peanut butter and honey to a small sauce pan, cook and stir over medium low heat until blended and smooth. Spread peanut butter mixture of the date nut mixture and chill for another 15 minutes.

  6. Place chocolate and coconut oil in a microwave safe bowl and heat for 1.5 - 2 minutes stirring every 30 seconds. Pour chocolate over peanut butter and return to the freezer for 1 hour.

  7. Remove from pan and cut into squares.

Store in the fridge or freezer.
