Breakfast Bars

These breakfast bars are happily not just for #breakfast, they make a great snack post #workout or anytime.


Makes 18 squares


INGREDIENTS:

  • 3 ripe bananas ( if you don't have bananas, sweet potatoes make a great substitute)

  • 2 eggs ( flax seeds can be used instead to make this recipe vegan, see note below)

  • 1/4 cup pure maple syrup

  • 1 cup oat milk

  • 1 tablespoon of pure vanilla extract

  • 3 cups old fashion rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • pinch of salt

  • 1 tablespoon cinnamon

  • 1 teaspoon ground cloves

  • 1/4 cup raisins

  • 1/4 cup dried currants

  • 1/4 cup dried cherries

  • 1/4 cup chopped walnuts


INSTRUCTIONS:

  1. Preheat oven to 350 degrees

  2. Line a 9 x 13 inch pan with parchment paper

  3. In a large mixing bowl add ripe bananas and mash them up with a potato masher, a fork or just use your hands.

  4. Add eggs ( or *flax eggs ) and mix together

  5. Next add the milk, syrup, vanilla and stir to combine

  6. Toss in the next six ingredients through cloves and mix well

  7. Fold in the dried fruit, nuts and pour into prepared baking dish making sure the mixture is spread evenly.

  8. Place in preheated oven and bake for 30 - 35 minutes.

  9. Allow to cool completely before slicing.


* To make flax eggs combine 1 tablespoon of ground flax seeds with 3 tablespoons of warm water. This is equivalent to one egg.
